 Wheat Substitute

Emmer Wheat is rich in fiber, protein, magnesium, and vitamins.      Sweet flavor and silky texture Rich content of the antioxidant lutein Sustainably grown on small organic farms in Minnesota USA.  In ancient Rome, Farro was a staple food that provided the main source of nourishment for the Roman legions. It was so coveted that it was even used as a form of currency. 

 Originating over 8000 years ago, Emmer (also known as Farro) is an ancient grain with wonderful characteristics. Emmer is a high fiber flour but sustains low traces of gluten, making it easier to digest and a great alternative for those suffering from wheat or gluten allergies. It is also a great source of protein, magnesium, and vitamins A, B, C and E.

 The flour is ground in a fine grind for multipurpose use. It works best in artisan breads, muffins, cookies, and coffee cakes.  It also yields a wonderful rich brown rustic pasta.  This fresh milled Emmer flour is naturally sweet with a nutty flavor. It can be used in place of your whole wheat flour for any recipe. This nutritionally dense flour has over 16% protein and absorbs moisture quickly; more so than other whole wheat flour. When following standard recipes you may find that you need to add more moisture about 1/4 more than what the recipe calls for.

 How did we get it? It was donated to the nonprofit for this sale by my sister's organic farm in Minnesota.    It comes from a certified organic family farmer in Minnesota, who has it milled at a local  certified organic miller.  They had a bonus year and donated some to the non-profit.  

Note: It does have small amount of gluten…  If I have to much gluten, it does bother me, but this flour does not…   but then I’m not gluten intolerance, just have gluten sensitivity.
